Mom’s Hamburger Patties

My brother is a picky eater.  He knows what he likes and everything else he dislikes.  When he and my mom visited me while I was studying abroad in Spain, we spent a lot of time looking for restaurants with dishes we thought he would like.  In the end, he ended up eating a lot of hot dogs while we enjoyed amazing tapas with Spanish beer and wine.  One of the most hilarious moments during the trip happened when the señora I was living with cooked an elaborate meal for us.  He couldn’t get himself to eat all the Spanish dishes she had made, but he couldn’t bear hurting her feelings by not touching any of the food.  So he secretly passed morsels of food under the table to my mom, who in turn had to eat two portions of everything.  Even thinking about it now makes me laugh out loud.  My poor mom left a fabulous meal with indigestion.

As he gets older, older meaning 13 going on 14, the number of likes has increased, but at a slow rate.  In order to provide a well balanced diet, my mom came up with ways to get him to eat his veggies without him knowing it.  She modified standard, classic dishes without compromising taste!  One of my favorites and judging by how clean my brother’s plate was tonight after dinner, one of my brother’s favorites is my mom’s hamburger patty.  It’s soft and moist with a hint of Asian goodness (ie. soy sauce and sesame oil). The grated potatoes along with the diced onions and carrots keep the moisture level high.  It’s not your typical greasy burger, however, it doesn’t lack in taste at all.  In fact, the recipe more closely follows that of a meatball.  I imagine they would cook in that form just as well.

For dinner we ate them with a little additional soy sauce and rice, however they are equally good eaten in a regular hamburger bun with a little bit of ketchup and lettuce.

Mom’s Hamburger Patties

Makes 5 regular sized patties

1/2 lb ground beef
1/2 lb ground pork
1 tablespoon roughly chopped fresh ginger
1 teaspoon soy sauce
Half a small potato grated
Half a small onion, diced very small
1/2 a large carrot, diced very small
2 teaspoons minced garlic
1 egg
2 tablespoons bread crumbs
2 teaspoons sesame oil
Salt and pepper

In a bowl, combine the ground beef and pork.  Squeeze the juice out of the chopped ginger and discard. Add the rest of the ingredients and mix well.  Form into round disks.  With you finger make a small indent into the middle of the patty.  This will help prevent the patties from forming a bulge.  Cook on a heated skillet or grill pan, flipping once.

    This is like an episode of some TV sitcom with the food secretly being passed under the table. Too funny.
    I like the addition of the potato to lighten the patties. Yum!

    I love the idea of carrot and potato in a burger! Genius. I think these sound great, I’ll add it to my ever growing list of recipes to try. Cute story about Spain 🙂

    Way to go on the NaPoBloMo endeavor! I actually made mini meatloaves very similar to this over the weekend. I just formed the meat into balls with an ice cream scoop, transferred them to a muffin tin, and baked for 30 mins. You need to drain the fat at the end but it’s a great no-fuss, quick way to make meatloaf.

Heyyyy I wrote a post! (Yes...it's been a while.) Heyyyy I wrote a post! (Yes...it's been a while.) It's about the smash cake I made for my baby's 1st birthday--an easy recipe made with wholesome ingredients and sweetened with fruits only. 

Even though the cake has no butter, oil, and refined sugar, it still has great bounce and fluff 💫. I frosted it with whipped, unsweetened Greek yogurt and heavy cream, and my baby loved digging into it on her birthday (see last photo). 

The cake also makes a nice snack or breakfast. For that, I skip the frosting and serve plain or I'll make little cake balls with Greek yogurt and hemp seeds which makes it even more filling and nutritious 😋.

This recipe is super quick and simple, and there are a lot of different variations that can be made--all of which are written out in my post. Check out the recipe from the link in my profile!

First bake post baby! I had to restart midway beca First bake post baby! I had to restart midway because I forgot the sugar 🤦🏻‍♀️. I almost quit because time was running out until the next 🤱🏻 and I still needed to finish up some other chores and food prep for the week. But I’m so happy I made it happen—even though the result wasn’t perfect. I’ve been wanting/needing to scratch that baking itch for awhile now 🙃. Any guesses on what I made? 🌽
Happy Lunar New Year 🐂!! I spent the last two m Happy Lunar New Year 🐂!! I spent the last two months being spoiled and taken care of by my mom. During that time I learned so much from her on how to be a mom and cook her food—the best in my opinion 😆. 

This is my attempt at the 떡만두국, tteok mandu guk, rice cake and 🥟 soup, that she taught me. It’s not quite the same, but hoping that one day my cooking will be as comforting and special to my daughter the way my mom’s is to me 💗.

It's been a tough year to say the least, but I hope everyone is able to find a silver lining in all of this. For me, it was having the space to enjoy my pregnancy quietly and with those closest around me, and giving birth to a healthy baby during a pandemic. ⁠

I don't know what's in store for 2021, but I think I'd be ok if it was a little less explosive than this year 🤣.⁠
