Merry Christmas!!! Hope everyone is having a wonderful time with a home baked holiday treat or two! I’ll be baking these oatmeal chocolate chip cookies today. If you’re looking for an easy, sorta guilt-free (ok maybe just the rolled oats part) cookie to make, this is your guy. They are soft, chocolate gooey, with a good nutty bite!
Oatmeal Chocolate Chip Cookies

Description
A no-fuss oatmeal chocolate chip cookie that’s perfect for the holidays.
Ingredients
2 cups (250g) all purpose flour
1 teaspoon (3g) salt
1 teaspoon (5g) baking soda
1 cup (227g) butter, room temperature
3/4 cup (150g) sugar
1 cup (200g) light brown sugar
2 eggs
1 teaspoon (4g) vanilla
2 cups (200g) oats
1 cup (115g) walnuts, toasted and chopped
2/3 cup (120g) chocolate, roughly chopped
Instructions
1. In a bowl sift together the flour, salt and baking soda. In a separate bowl cream the butter and sugars together. Beat in eggs one at a time then add the vanilla. Stir the dry ingredients into the wet. Then fold in the oats, walnuts, and chocolate. Chill for at least 1 hour and up to 3 days in the refrigerator.
2. When ready to bake, preheat oven to 350 degrees F. Prepare baking sheets with parchment paper. 3. Roll the dough into small, walnut sized balls. Place a couple inches apart on a baking sheet. Bake for 8-10 minutes or until the bottom of the cookie is golden brown. Immediate remove onto a rack and cool completely.
